[…]….In an unassuming west London arts centre, the “Synaesthesia” evening presents seven wine-matched courses. Before we begin, we are asked to arrange spherical amuse-bouches, coloured white, black, green and red, in the order of salty, bitter, sour and sweet. The black sphere, for example, turns out to be a bitter flavour bomb of Guinness and dark chocolate. Most diners place them in Youssef’s intended order. It’s a reminder that vision is the dominant sense and sets our expectations….
